Firecracker Chicken
Ingredients:
Chicken breasts 750gm
Chopped garlic 4 Cloves
Sugar 1 tsp
Dark soy sauce 3 tbsp
Oyster sauce 2 tbsp
Rice vinegar 1 tbsp
Tomato ketchup 2 tbsp
Tamarind paste 1 tbsp
Fish sauce 1 tbsp
Black pepper 1 tsp
Crushed red chilies 1tsp
Sliced onion 1
Dry red chilies 6
Chopped spring onions 1 bunch
Lemon wedges of 1 lemon
Chicken stock 100 ml
Oil 4 tbsp
Boiled rice to serve
Method:
Marinate chicken with crushed red chilies, garlic, sugar, tomato ketchup, tamarind paste, oyster sauce, soy sauce, fish sauce, rice vinegar and black pepper then leave for 1 hour. Now heat oil and saute chicken in it until changes color then add onion, chicken stock, dry red chilies, chopped spring onions, lemon wedge and cook for 5 minutes then serve with boiled rice.
Lemon Pepper Potatoes:
Ingredients:
Potatoes (cut in length) 5 large
Grounded black pepper to taste
Paprika 1 tsp
Salt to taste
Butter ¼ cup
Lemon juice 3 tbsp
Lemon zest 2 tsp
Oregano 1tsp
Method:
Mix potatoes with all ingredients then bake and serve hot.
Queso Dip:
Ingredients:
Oil 2 tbsp
Chopped onion 1 small
Minced garlic 3 cloves
Shredded cheddar cheese 1/4 cup
Shredded mozzarella cheese 1/4 cup
Milk 1 cup
Salt to taste
Grounded black pepper to taste
Diced tomato 1 medium
Chopped green chilies 3-4
Chopped coriander ¼ cup
Method:
Heat oil and saute onion in it. Then add garlic, green chilies, both cheese, milk, salt, black pepper and cook until it gets thick. Then add tomato, green chilies, chopped coriander and serve hot.
